Easy fish canapés for the festive season (or any time)
When it comes to entertaining, we love canapés that look impressive but take only minutes to put together. These four favourites are perfect for Christmas drinks, New Year’s Eve, or any gathering where you want something light, flavourful and a little bit special. Each one uses simple ingredients and relies on good-quality fish to do the hard work for you. (You do know that we sell fresh fish?!)
1. Filo parcels with smoked mackerel, cream cheese and chopped egg
These little golden parcels always disappear fast. The buttery filo stays crisp, while the smoked mackerel, cream cheese and finely chopped hard-boiled egg make a rich, savoury filling. Perfect served warm with a squeeze of lemon.
2. Croustades with honey roast smoked trout, crème fraiche, cucumber and radish
A fresh, colourful bite. The crunch of the croustade, the sweetness of the honey roast trout, and the coolness of the crème fraiche work beautifully together. A scattering of finely chopped cucumber and radish gives them a bright, festive finish.
3. Blinis with cream cheese, smoked salmon (or cold smoked trout) and Adjika
A classic canapé with a little twist. Soft blinis topped with cream cheese and silky smoked salmon become something even better with a tiny dab of Adjika. It adds warmth, depth and just the right amount of spice.
4. Ceramic spoons with prawn cocktail
A playful take on a retro favourite. Fill each spoon with a mixture of small Atlantic prawns, mayonnaise, crème fraîche, tomato purée and a touch of Tabasco. A leaf of fresh parsley on top makes them look wonderfully smart.
