Easy lunches that feel like a treat (but take 10 minutes)

Lunch can so easily become an afterthought - something grabbed in a hurry, eaten quickly, and forgotten just as fast  But it doesn’t take much to turn it into something you actually look forward to. With a few good ingredients and ten minutes (often less), you can put together something that feels like a small treat in the middle of the day - no cooking, no fuss, just really good food.

Here are five simple ideas to get you started.

1. The ‘not quite a sandwich’ board

Swap the standard sandwich for something more relaxed.

Take a piece of freshly-baked bread, add a wedge of cheese, a few slices of charcuterie, some olives or antipasti, and maybe a drizzle of olive oil or a spoonful of chutney.

No need to assemble - just arrange it on a plate and enjoy it piece by piece.

It feels slower, more considered, and somehow far more satisfying.

2. The open sandwich that actually feels special

If you do want a sandwich, make it open.

A thick slice of sourdough topped with something like:

  • Soft cheese and roasted vegetables

  • Cured meats and a handful of rocket

  • Smoked fish with a squeeze of lemon

Because everything’s on show, each ingredient matters - and it turns a quick lunch into something that looks (and tastes) far more thoughtful.

3. The instant antipasti plate

 This is as easy as it gets.

 A small selection of deli favourites:

  • a couple of cheeses

  • some sliced meats

  • marinated vegetables or olives

  • bread or crackers

That’s it.

It’s the kind of lunch that feels like it belongs on a sunny terrace somewhere, even if you’re just at the kitchen table. 

4. The “almost no-cook” pasta

Keep a good-quality fresh or quick-cook pasta in the cupboard and you’re halfway there.

While it cooks, stir together a simple combination:

  • pesto and a splash of olive oil

  • sun-dried tomatoes and soft cheese

  • olives, capers and a squeeze of lemon

Toss it all together and finish with a little grated cheese or fresh herbs.

It takes no more than ten minutes, but feels like a proper meal.

5. The upgraded toast

Toast is underrated.

Start with good bread, then go a step further:

  • cheese melted under the grill with a spoonful of chutney

  • ricotta or soft cheese with herbs and a drizzle of honey

  • tomatoes or antipasti with a little olive oil and seasoning

  • It’s quick, comforting, and endlessly adaptable depending on what you have to hand.

A small shift that makes a big difference

None of these ideas are complicated. That’s the point.

The difference isn’t time or effort - it’s the ingredients. A few things chosen well can transform something very simple into something you genuinely enjoy.

And once you get into the habit, lunch stops being something you rush through … and becomes something you look forward to.
