Appassimento is a winemaking technique where grapes are partially dried in the warm sun before they are pressed. Drying the grapes removes water and concentrates the sugars and acids. They lose 10-30% of their total weight during the drying process. This produces full-bodied wines with rich, velvety fruit flavours, deep colour and a smooth finish with a slightly higher alcohol content.
