Recipe: Creamy sea bass and king prawns with lemon and herbs

Some of the best meals are also the simplest. This creamy sea bass and king prawn dish comes together in around 15 minutes, making it perfect for a relaxed midweek supper or an easy weekend dinner that feels just a little bit special. The delicate flavour of the sea bass is complemented by sweet king prawns, fresh herbs, a squeeze of lemon and a splash of white wine, all brought together with a silky cream sauce.

Ingredients (Serves 2)

  • 2 sea bass fillets

  • 6–8 raw king (tiger) prawns, peeled

  • 2 cloves garlic, finely chopped

  • 1 tbsp butter

  • 1 tbsp olive oil

  • Juice of half a lemon

  • A small handful of fresh thyme, oregano or marjoram, chopped

  • A generous splash of dry white wine

  • 150ml double cream

  • Salt and freshly ground black pepper

To serve:

  • Steamed rice

  • A green vegetable such as tenderstem broccoli, green beans or asparagus

Method

Heat the butter and olive oil together in a large frying pan over a medium heat.

Add the chopped garlic and cook gently for around 30 seconds until fragrant, taking care not to let it brown.

Add the sea bass fillets and cook for 2–3 minutes.

Add the raw king prawns and continue cooking until they turn pink.

Squeeze over the lemon juice, add the fresh herbs and pour in the white wine.

Stir in the double cream and allow the sauce to bubble gently for a minute or two until warmed through and slightly thickened.

Season with salt and freshly ground black pepper, then serve immediately with steamed rice and your favourite green vegetables.
